Chilled Avocado Soup - Jan T.
4 ripe avocados - peeled, seeded
1 clove of garlic, minced
4 green onions, chopped
5 TBS chopped fresh cilantro
1 to 2 TBS chopped jalapenos w/juice
1/2 tsp Tabasco sauce
3 cups sour cream
1 cup buttermilk
8 cups chicken broth, chilled, fat removed
Salt and pepper to taste
Chopped green onions
Process avocados, garlic, 4 green onions, cilantro, jalapenos and
Tabasco sauce in a blender until smooth.
Add the sour cream. Process until blended.
Pour into a large bowl. Stir in the buttermilk and chicken broth. Season with salt and pepper.
Chill, covered for several hours.
Ladle into soup bowls. Sprinkle with chopped green onions.

Lemon Pound Cake - Pam
Mix the following:
1 pkg yellow cake mix
1 C. apricot nectar
3/4 C. oil
4 eggs
1 small pkg. instant lemon puddding
Beat well. Bake in Bundt or tube pan at 325 degrees for 45 min or until cake is brown and firm in middle. While cake is still hot, make a lemon drizzle of the juice of 1/2 lemon, 1/2 box powdered sugar, and enough water to make a good consistency. Pour over hot cake.


Frozen Lemonade Squares - Judye
18 squares Low Fat Honey Grahams, finely crushed
1/3 c margarine or butter, melted
1 qt. frozen vanilla yogurt, softened
1can (6 oz.) frozen lemonade concentrate, thawed
Thawed Cool Whip Lite (if desired)
Mix crumbs and butter. Press firmly onto bottom of 9" square pan. Bake if desired. Beat yogurt and Lemonade concentrate on medium speed until well blended. Spread over cool crust. Cover with Cool whip, if desired, or garnish with Cool Whip when serving, if desired. Freeze 4 hours at least.

Chicken Avocado Pita - Cheryl
2 chicken breasts, stewed, boned, and chopped
2 avocados, peeled and chopped
1 can water chestnuts, drained and chopped
2 stalks of celery, chopped
1 Tbsp. mayonnaise
1 Tbsp. lemon juice
Salt and pepper to taste
curry powder to taste
Pita bread (optional)
Mix all ingredients except pita bread. Chill for at least one hour. Fill pita to make sandwiches or serve on a bed of lettuce as a salad.


Strawberry Cake - Nelda
1 package white cake mix
3 tablespoons flour
3 eggs
3/4 cup cooking oil
3/4 cup water
1 (3 0z.) package strawberry gelatin
1/2 cup frozen or fresh sliced strawberries
Combine all ingredients in large mixer bowl & mix well. Bake in greased & floured tube pan in 350 degree oven about 40 min., or two 9" layer cake pans for 25 min.
Combine 2 tablespoons melted butter or margarine, 1 1/2 cups powdered sugar & 2 tablespoons crushed strawberries. Drizzle over warm cake. Decorate cake with choice fresh strawberries.

Spaghetti Salad - Judi Sheedy
1 lb. of spaghetti
2 cucumbers
1 green pepper
1 small red onion
Salad Supreme Seasoning (Mc McCormick or Kroger), _ of the jar
8 oz. of your favorite Italian Dressing
small tomatoes
Break spaghetti and cook as directed. Rinse with cold water.
Slice vegetables and add to spaghetti.
Sprinkle with the salad seasoning.
Add 1 16 oz. bottle Italian dressing & toss
Sprinkle with parmesan cheese and chill
Add tomatoes before serving
*I use other vegetables too. Use those in season—or vary according to your family’s likes.
